Spicy Garlic Lime Shrimp & Pasta

I’m not sure about you, but when I am in one of my “I’m going to eat healthier” kicks, the main reason I stop being really good about it is that I run out of healthy dinner options. The five healthy “got to” dinners get old real quick. But I am determined to stay on the right track this time….for good! So I am branching out and finding some really good, really healthy meals.

I got this recipe out of the Lean and Green cook book from Medifast.

Shane loves shrimp more than I do. I prefer it deep fat fried. I prefer everything to be deep fat fried. Or at the very least, covered in a cream sauce. But I was surprised how much I liked this. Shane LOVED it. It makes 3 servings so guess who gets the leftovers :)

Spicy Garlic Lime Shrimp & Pasta

Prep Time: 30 minutes

Cook Time: 10 minutes

Yield: 3 servings

Fat per serving: 12 total fat grams & 2 grams saturated fat

  • 34 ounces large raw shrimp or 21 ounces fully cooked frozen shrimp
  • 3 8oz packages of House of Tofu Shirataki brand noodles
  • 1 cup diced tomatoes
  • 1/2 cup diced green bell pepper
  • 2 Tbsp olive oil
  • 1 Tbsp lime juice
  • 1 clove garlic, minced
  • seasonings:
  • 1/4 tsp salt or salt substitute
  • 1/4 tsp cayenne pepper
  • 1/4 tsp garlic powder
  • 1/8 tsp dried thyme
  • 1/4 tsp ground pepper
  • 1/4 tsp dried parsley leaves
  • 1/4 tsp paprika
  • 1/8 tsp onion powder

  1. If you are using frozen shrimp, thaw. De-vein and peel shrimp if necessary. Make seasoning blend by combining the spices in a small bowl. Drain liquid from noodles, rinse, and set aside. Preheat a large skillet over medium heat. Once pan is heated, add olive oil and minced garlic. Immediately add shrimp, green bell peppers, and lime juice. Sprinkle the entire bowl of seasoning blend over the shrimp and peppers. Stir. Saute shrimp and pepper 3-6 minutes. Add drained noodles and continue to saute and additional 2-4 minutes or until the shrimp begins to brown. Remove from heat, toss with tomatoes, and serve!

The spice blend was awesome! I use to flavor and cook everything with butter. But I have slowly been learning over the last few years to use spices instead of adding unnecessary fat.

I didn’t taste the lime at all so I added a little more. I quite liked the “noodles” which surprised me since I am such a pasta girl. They were so long! Next time I am going to try and cut them or something. But I guess it is a personal preference kind of thing.

I didn’t have fresh tomatoes on hand so I used canned. It was fine but I think fresh would taste better.

This is definitely a meal we will be making again!

Looks so delicious! I love shrimp pasta dishes. Unfortunately, I am the only one since my husband is allergic to shrimp and the toddlers don’t like shrimp. :(
Thanks for sharing this recipe. Ill keep it in mind for my next Mommy Night.
